• The Classic Quote: Early polar explorer Dr. Frederick Cook from the 1897 Belgian Antarctic expedition famously wrote that penguin tastes like a mix of beef, odiferous codfish, and canvas-back duck roasted together, served with blood and cod-liver oil.
• Texture and Meat Type: Because penguins use their breast muscles heavily for swimming rather than flying, the meat is extremely dark, dense, and lean, often compared in texture to ox heart or older game fowl like pheasant.
• The Fishy Problem: Explorers noted that the meat has a strong, oily, and gamey flavor. Antarctic expedition leader Dr. Phillip Law noted that the meat tastes abominably fishy unless every last trace of fat and blubber is carefully trimmed away.
Legality and Status Today
• Protected Status: Eating penguins is now illegal. They are protected under the Antarctic Treaty and various international wildlife conservation laws that make harming or hunting them a crime.
